There are three main types of the Theobroma Cacao species- two sub-species- Criollo and Forestario and a hybrid of the two-Trinitario. The difference is due to the unique protein type in each type of bean.
Criollo has the reputation of being the highest quality bean with a delicate, fine, complex flavor. However Criollo is difficult to grow due low disease resistance and low yield.
Forestario has high disease resistance and good yield. It has a rich robust flavor and is the type used in most commercial chocolates.
Trinitario is a hybrid of Criollo and Forestario and has the best qualities of both species.
